Mild-tasting millet makes a handly alternative to rice. It is delicious in indian rice dishes, soups and salads, but benefits from being lightly toasted before boiling. Millet flour is sometimes also made into pasta.
Barley is a pale brown grainused all over the world in breads, breakfast cereals, puddings, porridges, stews and soups. Braley is also used in and fros sweetening drinks such as barley water, beer and other alcoholic bevareges.
Finally, dating back to the ancient incas, is a grain called quinoa. It looks a bit like millet but it is pale brown in colour. It has a mild taste and a firm and chewy texture and it is considered the new superfood because it is full of protein and can be used any dish instead of rice, wich is more expensive and has less protein.
